Healthy Mushroom Soup with Coconut Milk
Looking for a fast and simple mushroom soup that is elegant enough to serve to company? Look no further than this healthy version of a traditional cream soup made instead with coconut milk. Not only is this recipe easy on the wallet, it packs a nutritional punch and tastes so much better than store-bought canned soup.

Mushrooms are incredibly nutritious and a satisfying alternative to meat. They’re loaded with vitamins and minerals including B vitamins, potassium, magnesium and zinc. Considered a nutritional powerhouse, mushrooms are known to support your immune which is of benefit as we head into flu season.
INGREDIENTS

1 tablespoon (15 ml) olive oil

1 onion diced
-
4 cloves crushed
-
5 cups (1250 ml) sliced mushrooms

2 tablespoons (30 ml) soy sauce, optional
-
1 tablespoon (15 ml) red wine vinegar or lemon juice

1/4 teaspoon (1.25 ml) salt
-
1 teaspoon (5 ml) thyme
-
1/4 teaspoon (1.25 ml) rosemary
-
1/4 cup (63 ml) flour, regular or gluten-free
-
3 1/2 cups (900 ml) vegetable, mushroom or beef broth
-
One 13 ounce (400 ml) unsweetened coconut milk, regular or lite
-
Sliced green onions, chives or chopped parsley for garnish
INSTRUCTIONS

In a large pot, heat the olive oil and then add the onion and garlic and fry until softened.

Add the mushrooms, salt, thyme, rosemary and sauté for about 8-10 minutes on low heat.

Add the flour and combine with the other ingredients for 3 minutes.

To the pot, add the broth, soy sauce, red wine vinegar or lemon juice and coconut milk. Cook for 15-20 minutes until the mushrooms have softened.

To serve, garnish with sliced green onions, chives or chopped parsley.
